Run by mother and son team Spencer John and Laurie Hubball, Simply V was born in 2013 out of a desire to share their cakes with the world. Having raised her family as vegetarians, Laurie and Spencer have been vegan for around 13 years and wanted to share their passion for the food they loved. After running a few pop-ups at local events, including Cardiff’s Vegetarian Festival, the pair were inspired by the vegan businesses they saw in cities such as London, Brighton, Berlin and New York. Seeing the variety available for vegans elsewhere was eye opening, making them think “Wow! Cardiff needs something like this!”
As well as store cupboard basics, Simply V also stocks ready-meals, snacks and sweets – with everything from pizzas and pulled jackfruit to fresh cakes and chocolate available in store. “The campaign has already had an impact on the store. Our customers have really got behind the City of Arcades project,” says Spencer, “They wanted to share our story and it was really humbling to find out we made it into the Top 10.”
